Breakfast ideas for your camping holiday
/If you're going camping, you’ll need a good quality morning meal to set you up for the day. Here are some simple breakfast recipes to make delicious dishes for you to enjoy in the great outdoors.
Chilaquiles
This recipe serves four people.
Ingredients
· 158ml vegetable oil
· 12 corn tortillas, cut into pizza-type wedges
· 1 small red onion, diced
· 4 cloves garlic, minced
· 474ml tomato sauce with two chopped jalapenos (or 2 cups El Pato sauce)
· 1 teaspoon salt
· 4-8 eggs
Optional serving ingredients
· Chopped fresh coriander
· Slices of avocado
· Grated cheese
· Slices of fresh lime or lemon
Method
Heat the oil in your pan or Dutch oven over high heat. When the oil is hot, fry the tortilla triangles (in single layers, flipping once) for a few minutes until they’re slightly brown.
Remove the tortilla chips and set them aside to drain on a paper towel. Repeat for the remaining tortilla triangles.
Turn the heat down to medium, cooking the red onion for a few minutes. Add the garlic and cook for about half a minute more.
Add the tomato sauce, salt, and a splash of water. Let the sauce simmer, then add the fried tortilla chips and stir well to coat them with the sauce.
Move the tortilla chips to the outside edges and cook the eggs by creating a well in the center. Drop the eggs in the well and cook as you wish. You can either scramble them or cover the skillet and let the eggs poach in the sauce. Serve with your desired extra toppings, and enjoy!
Deluxe Sausage and Egg Sandwiches
This recipe serves six people.
Ingredients
· 454g ground pork sausage
· 2 teaspoons dried herbs (thyme, sage, rosemary, etc.)
· 1 teaspoon salt
· 118ml honey
· 2 tablespoons sriracha
· 6 eggs
· 6 slices cheese
· 6 English muffins
Method
Mix the ground pork, herbs, and salt in a large bowl. Form the mixture into six round sausage patties. Combine the honey and sriracha in a small bowl and set aside.
Heat your griddle or skillet, and cook the sausages for two or three minutes on each side or until browned. While the sausages cook, cook the eggs (as you like them) and toast the muffins.
For the assembly, spread the sriracha and honey sauce on each muffin. Top with a sausage patty, an egg, and a slice of cheese. Serve while hot.

Cinnamon Apple Oatmeal
This recipe makes four bowls of oatmeal.
Ingredients
· 946ml water
· A pinch of salt
· 256g rolled oats
· 2 medium apples, cored and diced
· 1 teaspoon ground cinnamon
· 0.5 teaspoons ground nutmeg
· 0.5 teaspoons ground cloves
· 0.5 teaspoons allspice
· 4 tablespoons seeds (try a combination of equal parts of hemp, flax, and chia seeds)
· 4 tablespoons maple syrup
Method
Heat the water and salt until it comes to a boil. Add the oats and let simmer for 5 minutes, stirring occasionally.
Add the apple, spices, and maple syrup, and cook for 5 more minutes. Serve hot.
Banana Blueberry Pancakes
This recipe serves four people (makes 12 pancakes).
Ingredients
· 256g flour
· 85g cup powdered milk and 474ml water, or 474ml milk
· 4 tablespoons sugar
· 2 teaspoons baking powder
· 0.5 teaspoon salt
· 2 eggs
· 2 bananas, sliced thinly
· 1 cup blueberries
· 2 tablespoons butter
Optional toppings for serving
· Maple syrup
· Honey
· Cream
· Fresh berries
Method
In a bowl, mix the flour with the powdered milk (or milk), baking powder, and salt. Add the egg (and the water, if using powdered milk) and mix well with a fork.
Heat your skillet over medium-low heat and add some butter to coat the pan. Pour appoximately 80ml of batter per pancake into the skillet.
Scatter the pancake with some banana slices and blueberries. Cook each pancake for about two or three minutes, or until the sides are set and bubbles form on top.
Flip the pancake and cook till the other side is golden brown. Repeat with the rest of the batter, adding butter as needed and serve your pancakes stacked with your chosen toppings.
Skillet Cinnamon Buns
This recipe serves eight people.
Ingredients
· 113g cream cheese
· 1 tablespoon white sugar
· 6 crushed Oreo cookies
· 1 tube pre-made cinnamon bun dough
· Skillet or baking sheet
Method
Mix the cream cheese, crushed Oreos, and sugar. Remove the cinnamon buns from the tube and unroll them.
Spread the cream cheese mixture on the inside of each bun and then roll them back together.
Place the buns in a skillet and cook (or cover in foil and cook on a campfire) until golden brown.
Remove from heat, and if you have any leftover cream cheese and Oreo mixture, you can let the buns cool and then spread extra cheese on top before serving.
